Join us as we return to the beguiling setting of La Torre del Visco with Nieves Barragán. Our recent visits to this tranquil 15th-century estate have revealed its many special qualities, from the warmth of its hospitality to the bounty of the surrounding landscape, and we can't wait to share them with guests old and new.
Nieves will bring her deep knowledge of Spanish cooking, ingredients and traditions to the kitchen, and together with Valentine, will create menus that draw inspiration from the estate's organic farm, regional producers and the rich food culture of Aragón.
Richard Hart, baker and author of James Beard award-winning ‘Richard Hart: Intuitive Sourdough Baking’ will lead hands-on baking workshops, sharing his passion for the craft. Henrietta Lovell, founder of Rare Tea Company, will guide guests through an exploration of taste and flavour, and how this connects to our surroundings in the warmth of the Spanish spring.
Beyond the kitchen, days will be spent exploring the valleys and slopes of the nearby mountains, discovering the wild beauty of Matarraña and the richness of its natural larder. We will forage and taste olive oils with local expert Victor Enrique, and seek out wild waters and waterfalls for a refreshing swim. There will also be time to slow down, bask in the tranquillity of the estate and enjoy the generous hospitality that makes La Torre del Visco such a special place.
Nieves Barragán
Nieves Barragán is one of the pioneers of Spanish food in the UK, and so it’s only fitting that her first Kitchen In The Wild adventure is to La Torre del Visco. Her cooking is rooted in the flavours of her native Basque Country, always with a respect for ingredients and heritage. Nieves moved to London from Bilbao in 1998 working her way up through various kitchens before becoming executive chef at Barrafina which won a Michelin star in 2013. In 2017 she left Barrafina to open Sabor in Mayfair, followed by Legado in Shoreditch in 2025, both of which now hold a Michelin star. Nieves has a wonderful and infectious vitality and we are so looking forward to spending time with her in the stunning surroundings of La Torre del Visco.
The Location:
La Torre del Visco
La Torre del Visco is a 15th-century estate sitting in the wooded folds of the Matarraña, Spain, a spectacularly stunning area seemingly unknown, such is its empty rural tranquillity.
Perched on a hill with a backdrop of forest thick with pine, oak and wild boar, this turreted (Michelin key) hotel looks out over a valley dotted with an extensive orchard of twisted ancient olives, each so old they are sure to have seen many secrets play out beneath their boughs. Such places as this are hard to find and we feel incredibly fortunate that having looked high and low the invitation came from the owner that we visit them.
Serene, rose bordered terraces look out over mountains, trees and large skies, a wonderfully peaceful place to sip sherry as the light dips while a garden swimming pool, nestled in the tree line, offers cool respite from the days sun under the glorious racket of cicadas and the piney woodland scent that fills the air. Inside, the rooms are very comfortable and welcoming whether a suite at the top of the tower or overlooking pretty gardens or the valley. The kitchen is a cook’s dream with a large table for any guest who might want to sit and chat alongside the daily preparations.
La Torre del Visco is a haven of tranquility where such silence in natural surroundings surely is a luxury above all others. A hidden gem, its walls full of friendliness, its team a pleasure to be with, we are delighted to count it as one of the homes for Kitchen In The Wild.
